Dry Noodle Production Line
The dry noodle production line is a highly automated system designed to produce dry noodle strands continuously and efficiently. The fully automatic dry noodle making machine includes an alkaline water mixer, metered water supply system, dough mixing, dough resting, combined pressing machine, continuous pressing machine, noodle cutting, rack conveying, consistent noodle bottom cutting, drying, and packaging.
The machine typically cuts noodles with lengths ranging from 12cm to 30cm. The drying time is about 4 hours. The primary raw material is wheat flour; however, you can add a small amount of vegetable powder, sauce, or egg powder to change the noodle color. There are two drying methods: one using multiple parallel lines and the other using a single circular operation line.
Production capacity ranges from 300kg/hour to 2000kg/hour.
Production Process
Alkaline Water Mixing and Measuring System
This is the mixing unit where alkaline water and regular water are thoroughly combined to ensure even distribution and stable quality of the alkaline solution. The system includes dosing equipment to precisely measure and dispense alkali (e.g., sodium carbonate) and water in correct proportions.

Dough Mixer
The dual-shaft design improves mixing efficiency by creating multiple contact points between ingredients. Each shaft is equipped with blades, paddles, or other mixing elements to move, lift, and fold the ingredients, ensuring even distribution. The mixer is typically made of stainless steel or food-grade materials, making it easy to clean between batches. Mixing speed and duration are adjustable to accommodate various recipes.
Dough Resting Machine
This machine includes a chamber for placing dough during the resting process. The chamber is designed to accommodate different batch sizes and provides a controlled environment for temperature and humidity to optimize dough maturation.
Material types: Round disk type and conveyor type.
Rolling Machine
Equipped with paired rollers to flatten and stretch the dough. The rollers can be adjusted to control dough thickness. Conveyor and roller speeds are also adjustable to provide flexibility for different flour types and to ensure optimal results. Safety features include emergency stop buttons and protective covers to prevent accidents.
Drying Room Equipment
Ensures proper ventilation to promote air circulation, allowing even drying and preventing mold. Maintains a controlled environment with specific temperature and humidity levels suitable for drying noodles. Racks or hanging systems are installed to suspend noodles during drying, ensuring sufficient space between strands for air flow.
Dry Noodle Cutting Machine
This machine features an adjustable cutting mechanism to achieve the desired noodle length. It also includes a conveyor or feeding system to move noodles through the cutting process. A smooth and efficient feeding system is critical to ensure uniform cuts.
