Production Process
The process starts with cutting the meat into smaller pieces using a meat cutter, preparing raw materials to the proper size. The meat is then transferred into a vacuum tumbler, where it is evenly marinated and rehydrated, improving elasticity and water retention.
Next, the seasoned meat is filled into casings using a hydraulic sausage stuffer, ensuring tight and uniform sausages. After stuffing, the sausages enter the smoking oven, where they are simultaneously dried and smoked. This step gives sausages their signature color, aroma, and a rich yet balanced taste.
Following smoking, sausages undergo high-temperature sterilization to ensure food safety. They are then packaged with a vacuum packaging machine, which helps prolong shelf life and prevent bacterial contamination. Finally, the vacuum-packed sausages are sterilized again at high temperature before being distributed to the market.
